The salmon cut of beef is a lean, boneless joint taken from the hindquarter of the cow. It's named "salmon" not because of its flavor, but due to its distinctive appearance: when sliced, the meat has a grain and texture reminiscent of salmon fillets. This cut is prized for its tenderness and is relatively low in fat, making it a great option for roasting or slow cooking.
